RELATIONSHIP:
We were introduced to the farmers of Bélen Gualcho, a small village in the mountains of Honduras, by our import partners at Finca Terrerito. Their approach in connecting farmers to roasters is focused on providing access to the specialty to market to small lot producers. We are thrilled to have been selected to help feature this great coffee collected from 7 farms who practice sustainability and act as community drivers.
VARIETAL:
Our interest in the use of Pacas, a natural mutation of Bourbon varietal which originated in El Salvador at the turn of the 20th century, began about 10 months ago. Pacas is considered a more sustainable varietal due to its increased resonance at higher elevations and greater yield - making it much more approachable for producers as they are increasingly working to cultivate more coffees with a balance of sweetness, floral, spice and acidity.
ROASTING:
During crop selection, we sought a coffee that was inviting and balanced while still standing out with character. Finding this harvest available in both washed and natural process, we’ve enjoyed working with these coffees for several months to highlight its velvety texture, notes of black tea, plum, and chocolate nougat, while accentuating the spicy - yet sweet -lingering finish.
